Fresh cranberries, to garnish
Mandarin essential oil, as a final touch

Making the Cordial: Combine the listed items into a pot, bring to a simmer, stirring to dissolve. Then, turn off the heat allowing it to cool entirely. Pour into an sterilised bottle, close it and refrigerate it in the refrigerator, it can be stored for around a month.

For the Cocktail Base: Mix all the liquids into a big jug, allow it to infuse for 60 minutes, then filter it best through a fine cloth, making it fully clarified.

To serve: Measure 85ml of the batch mix into your stirring glass packed with ice, gently stirring carefully for a minute to cool it down. Strain into a cold coupe glass or similar, top with the cranberries and finish by giving it a quick spritz of mandarin oil over the drink.
